Apple and Strawberry Gummies

One thing I can't stand is food waste. With my son going back to school, I'm finding a lot of the fruit I'm sending with him is coming back.

I like to try and think of some creative ways to use it up and this is something I have tried recently.

750gr mixed apple and strawberry pieces, chopped

500ml water

1 tsp maple syrup (optional)

3 tbsp gelatin - I prefer grass fed gelatin.

Add the mixed fruit, water and maple syrup in a saucepan and cook over medium heat.

Cook for 20 mins or until very soft and the liquid has reduced a little.

Meanwhile add the gelatine to 1/2 cup of water and let sit for a few minutes.

Let the fruit mixture cool (ensuring it is still slightly warm - not hot, don’t burn yourself!) and carefully pop 1 cup of the mixture into a food processor. Ensure your food processor can be used with warm ingredients. Process until smooth.

Add gelatine mixture to food processor and process until combined.

Pop in trays and cool.

Once hard, pop out and enjoy.

If you find the gummies too stiff, use more fruit mixture or less gelatine mixture.
